Mexican Chopped Salad
serves 4
Ingredients
1/2 C red onion, thin rings
1 C Jicama, peeled and julienned
1 ea zuchhini, 1/2" dice
1 ea cucumber, 1/2" dice
1 C cherry tomatoes, halved
2 ears corn, roasted
1 cn garbanzo or black beans, drained and rinsed
1/2 C cilantro, fine chop
1 T lime juice
1/2 t cumin
4 T olive oil
Instructions
Whisk the olive oil into the lime juice, then whisk in the cumin and season to taste.
Mix the remaining ingredients, dress, plate and serve.
